Udon in a vegan dashi broth made with kombu and toasted soya beans, served with incredibly juicy and flavourful marinated abura-age (soya bean curd) along with grated ginger, spring onion, shichimi and crispy tempura batter. Comes wit a side of pickles and edamame.
Our udon is matured overnight – it is alive, and continues to develop in the following days. We recommend to consume within 2 days of delivery.
