Our udon dough is matured overnight and needs time to prepare. We source ingredients to order from local farms.
For these reasons we stop taking orders at 11am Thursday for delivery the following day.
We make udon by hand in limited batches so can sell out.

About Us
Kotori is our project to deliver fresh, delicious udon, rolled and cut on the morning of delivery, right here in Lewes, along with with beautiful, clean, deep dashi broth and carefully selected toppings and sides.
With Kotori we aim to combine Japanese food culture with amazing local produce to create our own food that is honest and delicious.
